Don McMuffins

We often want a quick simple lasting breakfast. What we call Don McMuffins are the answer.

We pan fry the inside of English muffins with a touch of butter. some meat dojour. We usually use butterflied Italian sausage halves or a country sausage patty but sometimes use ham or bacon. Fry an egg for each muffin about the size of the muffin. Break the yolk when cooking. Layer a patty of cheese dojour between the muffin, the meat, the egg and the muffin as glue. Pop the whole thing in the microwave for 30 seconds each.

We usually have precooked sausage or bacon or lunch meat ham available that can either be warmed in the fry pan or microwave,  if frozen. Our favorite cheese for this is pepperjack but any kind works well.

After the mufffin comes out of the microwave oven the top will need to be repositioned again since it always skates off. Hang on and enjoy your breakfast.
